This is a super easy recipe for sweet light cupcakes, perfect for a ‘ladies only’ occasion – I made these yesterday for an evening making jewellery with friends. The Lady Grey tea has orange and lemon peel in it which adds a delicate citrus flavour. I’ve made Lady Grey biscuits before but not cakes, so this was a little experiment! Makes about 12 cupcakes.
115g unsalted butter
115g caster sugar
2 eggs, beaten
115g self-raising flour
1 tsp lemon zest and juice
1 tsp vanilla extract
Contents of 1 Lady Grey tea bag
Preheat oven to 180 degrees/ Gas mark 4. Cream the room temperature softened butter and sugar together until pale and fuffy, then gradually add the eggs, beating well after each addtion. Add your vanilla extract, lemon zest and juice then carefully fold in the flour and Lady Grey tea then spoon into your paper cases. Bake for about 20 minutes until golden brown, springy and risen. Place cakes on a wire rack to cool then enjoy – with or without a Lady Grey tea!
These look/sound tasty, and I love Lady Grey tea. Is it me – Do you actually put in the contents of the tea bag rather than using a strong tea as a liquid in the cakes?
Hi, yes I do actually put the contents of the tea bag in rather than make a strong tea from it! For the Lady Grey biscuits I make, I brew a strong tea to add to the icing I drizzle on top of them. I can’t see why you couldn’t brew the tea to add to a buttercream or cream cheese topping on these cupcakes (as long as the tea was cold so as not to melt the cream cheese or butter!) x
